Ropa Vieja Slow Cooker Style

This is one of my favs! Shredded beef with green olives. Love Cuban food.

Ingredients:

2lbs beef. Flank is best but I used diced stew meat this time, way less money.
4 TBLS oil of choice
1 very large Spanish onion sliced thin
6 garlic cloves chopped
1 orange juiced
16 oz tomato sauce or crushed tomatoes
1/4 cup cider vinegar
2 TBLS cumin
1 dried oregano
1/2 cup chopped fresh cilantro
2 TBLS tamarind paste
1 tsp salt and pepper mix
1/2 cup green olives pitted with pimento
1/2 cup sliced carrots
1/2 cup diced red or green peppers

Method

1) heat 2 TBLS oil and over a medium heat brown the onions and garlic , add to slow cooker.
2) heat 2TBLS oil over high heat and brown beef cubes, season with salt and pepper mix and add to slow cooker.
3) add all other ingredients to slow cooker and set in low over night. In the morning stir to shred the beef and you are done!!
